Fresh, saline, unctuous and complex, it accompanies fish dishes from grilled to oven-cooked, seafood and cheese.
Selective manual harvest in 15kg boxes, soft pressing of whole bunch, decantation after 24h of sedimentation, to stainless steel horizontal fermentation vats (50%) and 500l French oak barrels (50%). Fermentation with controlled temperature batonnage without addition of sulfur. Aged in stainless steel tanks for 1 year and in bottle for 1 year.
